And easy, one pan bake for a well balanced and nutritious meal! Make for dinner and have leftovers for lunch, or use to mix & match into other meals throughout the week!


ONE PAN CHICKEN VEG DINNER

For an easy, well balanced weeknight meal this recipe is a go-to in my household! Lean protein, complex carb, and two colorful vegetables options making for a satisfying meal that you can can mix and match most sauces and seasonings with. I love to prep this one-pan meal on a Sunday afternoon for Sunday night dinner, then use leftovers to mix into salads for lunch or into a curry for another dinner that week! Enjoy!


ONE PAN CHICKEN VEG DINNER


Ingredients

Serves 4 (recommend doubling for leftovers)

  • 1.5 lbs Chicken Breast

  • 4 large Sweet Potatoes

  • 2 lbs Brussel Sprouts or Broccoli

  • 3-4 Bell Peppers

  • 2 Red Onions

  • Sea Salt

  • Pepper

  • Additional Seasoning of choice (I like to use McKormick's steak seasoning)

  • Olive or Avocado Oil Spray


Instructions

  1. Preheat Oven to 350 degrees

  2. Wash/Rinse necessary ingredients (potatoes, peppers, brussel sprouts)

  3. Dice up all ingredients into bite sized pieces (half the brussel sprouts)

  4. Season the meat with desired meat seasoning

  5. Lightly coat large baking pan in Oil of Choice, then toss all ingredients onto the pan, spray with Olive oil for a light coating then top with salt and pepper and additional desired seasoning

  6. Bake until thoroughly cooked (about 30-40 minutes)

  7. Enjoy with condiments of choice for dipping or mixing in!
