Lactation Friendly Superfood Protein Bites

Enjoy this nutrient packed snack that supports breast feeding moms while enhancing your daily intake with rich superfoods!

These flavor packed Superfood Protein Bites are loaded with essential micronutrients for breastfeeding moms including iron, omega 3 fatty acids, manganese, magnesium and vitamins C, E and copper and more!


Also an excellent source of protein, healthy fats and fiber, this nutritious snack also serves to support your muscular health, digestion and energy levels while keeping you satisfied between meals.


Effectively refuel your body and satisfy your hunger with this protein filled treat that is also super easy to make!


I keep my fridge stocked with these to have easy grab snacks both essential for being able to easily grab from the fridge throughout the day or bring with me out the door.


I recommend doubling the recipe to have an ample amount stocked up!


Makes about 12 Bites

Ingredients

  • 1 cup old-fashioned oats

  • 1 scoop vanilla protein powder

  • 2/3 cup toasted shredded coconut (sweetened or unsweetened; can also use regular shredded coconut vs toasted)

  • 1/2 cup ground flaxseed

  • 1 tablespoon chia seeds (optional)

  • 1 tablespoon cinnamon

  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips) (optional)

  • 1/4 cup pumpkin seeds and/or crushed walnuts (optional for added crunch!)

  • 1/2 cup creamy peanut butter or almond butter

  • 1/3 cup honey

  • 1 teaspoon vanilla extract

  • *** Add in additional peanut butter or honey as needed if mixture is too dry

Instructions

  1. Combine all dry ingredients into large bowl and stir

  2. Then stir in the nut butter, vanilla extract and honey using a silicone spatula (I've found this utensil to be better for mixing everything together to get it into the best texture!)

  3. Roll into 1 - 1.5 inch sized balls with hands

  4. Store in fridge in an air tight container

  5. Enjoy!!
